At the 2023 Oregon Wine Symposium, the Understanding Acid Chemistry session covered the science behind acid chemistry. In part II, our speakers will take a more practical approach by focusing on how to use that science to fine-tune acid additions and solve some of the more complex acidity issues that face us in regions across the state.
